lemon + eggs + butter





By George we've got a lot of muddy eggs at the moment.

So... What does one do that has unlimited access to a substantial amount of divine organic eggs and a lemon tree the size of a small country?

We got stuck in and tripled a recipe for lemon curd.

(Note to self: when recipe calls for unsalted butter... don't use salted butter.)

Turned out yummy over a bought sponge cake from the markets today. Would have been supreme if it was also covered in lavish coatings of whipped cream too.

Don't worry. There's still sponge left (not to mention JARS of lemon curd).
Cream is in the fridge waiting for smoko tomorrow.

apples and oppy's




My family and I went on a small apple rampage yesterday afternoon. I made my Grandmother's apple sauce (with lots of lemony goodness - we have a lemon tree here that rival's my grandparent's uber-sweet and fragrant lemon tree which I never thought I would ever see!) and my Grandmother's apple cake.

While Gretta and I were madly stirring the cake mix, Baxter and Nic were peeling the apples with Monty on Nic's hip.  It made my heart bloom to see my whole precious little family working together with excitement in their eyes.

I fell in love with this little dish and I plan to make deviled eggs on it perhaps with a spot of parsley or something frilly(ish) in the middle.

Also - under the egg plate are 2 vintage train books that Mr. soon to be FOUR is going to be obsessed with as of Thursday.


We found a garage sale down the road on Saturday when our local town was holding it's boot sale. We got some great little bargains.. I got this cute little cupboard for ten bucks. I immediately ripped off the hideous black knob on the front and replaced with the glass knob that mom and dad brought out from the states. Lovely.

home kill



This doesn't happen in too many people's sheds these days.  Home Kill. We have just spent the morning putting an Angus/Jersey Cross heifer into the freezer.  We have a fella come out and cut it all up in the shed and I pack it away in the freezer.
 


look at that beautiful yellow grassfed fat! Osso Bucco, Rib Fillet Roasts, Heart, Ribs, T-bones, Mince, Sirloins......



A bit trimmed off for dogs and such..


the 100+ year old Sausage maker and some swift hands at work.  We made Pumpkin & Fetta gluten free sausages this time. Roger made Chipolatas (wee ones) for Gretta.





.....and what does one do after all that hard work???


Goes home and has EYE FILLET for lunch.
No veg.
Just meat in butter with a dash of S&P.
There's a bit of life-force behind that!

Liver with sage grilled onions carrots and celery

Fresh liver is a funny thing for me. As long as Nic does all of the cutting and actually places said liver fillets in the pan - I love it. If I touch it raw - it will give me the heebie-jeebies and I wont enjoy my meal.  This blend with the sage is really really good. The only thing I forgot to do was to soak the liver in lemon juice first.. which draws out impurities and improves the texture.


melt a large amount of coconut oil and butter in large skillet. Slice up onion and sautee gently while you slice up a stalk of celery and grate some carrots. Add to pan with 1T dried sage. Let it all start to soften and scrape to one side of skillet. Add more butter and coconut oil and add thinly sliced liver that has been dredged thru flour (I use spelt). Do not over cook - just till blood rises to top then turn over and finish cooking.
 

spoon the saged onions over top with a fresh side - we had fresh pear tomatoes (I am obsessed with these little sweeties).  I gave the kids tomato sauce and they devoured all of their liver and loved it.

So good - full of Vitamins A&D and essential fatty acids copper, zinc, iron and antioxidants.
Get it into ya!

Happy Birthday Nic!









We have just polished off GINORMOUS slices of Pav in honour of my Mr's birthday. This kids were very excited to help open parcels this morning, and the little miss was keen to try on the snorkeling gear. 

What do you reckon of my very first Pavlova? It was delicious. Happy Hubby too.

devilish fritters eeeek!



Apparently these are the devil.
According to the little Miss.

After 2 weeks away eating mostly CRAP while we were away... We are all feeling a bit diminished of nutrients... so I have been cooking today. We've had our doses of Cod Liver Oil and have had our Monavie juices and our Olive Leaf extracts... And just when I put something that does not resemble a sandwich or a chip, SHE bucks the system.

She was served our homegrown Zucchini Fritters for lunch.
She Refused Them.

She asked for a banana after her afternoon nap but was refused and I gave her the fritters.
She Refused Them.

She was served her fritters for dinner tonight.
She Refused Them (even with homemade chocolate pudding as bribery for dessert! (which by the way worked a charm for the big boy!))

By the morning she will be on 24 hours without food. I think I had better get my skates on in the morning and get the child some food quick smart or else I think I will have a very CRANKY pants running the show.

Do you think I should offer her the fritters again?

Am I a bad mother?
