sourdough

Oh Dear, it's chilly out there!

I've been honkering down inside waiting for a break in the cold and rain to do anything outside! Lucky I got my broccoli planted the other day. You should see the bunnies. They are so sorry looking bracing themselves in the wind trying to nibble on their grass and silverbeet.

A dear friend of mine has shared some sourdough starter with me, and we've made a few loaves. Some better than others, but we are using Spelt flour and so it's a bit more of a guessing game than it would be with wheat. It came with explicit and strict instructions, and as long as I play by the rules - we get a good loaf. Playing by the rules is never a strong suit of mine.... but... I digress....








All batches, bar one have been totally edible and enjoyable. One batch however were named "hockey pucks" and we were worried that we would have to undertake some dentistry work if we continued trying to eat them.

Is it sour dough when they call the starter the "mother" and it needs a healthy dose of every day bacteria...ie saliva?

I have heard stories of "mothers" lasting for up to 100 years and being handed down through generations.

Is that it or do I have it all wrong?

Umm - I know that sourdoughs have been around for a very long time and can keep being passed on and on, I have not, however heard of saliva in it. I feed mine everyday with a smidge of flour and water. It collects it's own bacterias mostly airborne. xx

Oh this is inspiring me Amy! Matt's mum has given me all her old loaf tin's she used to make the kids bread every day, grind their own organic flour - that is a dedicated earth mama! Winter resolution - bake bread.

sourdough addict here. not too many fails yet either. like you, i have to resist the temptation to get too creative and experimental. most frustrating is that the dog has developed a taste for it too and swiped several warm loaves off the bench. does he appreciate all that time and effort?xo

I really, really want to try making my own bread. I don't know why I haven't done it yet. Bit scared...
